Here's what you're going to need!
1 package of four cheese tortellini
1 container of chicken broth
spinach (desired amount)
1 package of mushrooms
I love this meal because it's a one pot wonder! Simply add everything to your pot and add about 1 cup of water. Cook on a low-medium heat with lid. Continue to add small amounts of water to maintain consistency. Turn heat to low and allow to cook at least 30 minutes. By this time, your veggies will be soft and full of flavor! Serve with fresh baguette and a crisp white wine, yum! Sprinkle with fresh Parmesan cheese if desired.
